Description
Savory sourdough bread loaded with everything bagel seasoning and gooey cheddar cheese. Perfect for breakfast sandwiches or toasting.
Ingredients
100 g active sourdough starter
375 g bread flour
275 g water (room temperature)
8 g salt
75 g shredded sharp cheddar cheese
2 tbsp everything bagel seasoning (plus extra for crust)
Instructions
1. Mix sourdough starter, water, and flour until no dry spots remain
2. Rest dough 30 minutes
3. Add salt, cheddar, and everything bagel seasoning; fold gently
4. Bulk ferment 4–6 hours, doing stretch and folds during first 2 hours
5. Shape into loaf and roll in extra seasoning for crust
6. Cold proof in fridge 8–12 hours
7. Preheat oven to 475°F with Dutch oven inside
8. Score dough, place in Dutch oven, bake covered 20 minutes
9. Uncover and bake another 20–25 minutes until golden and cheese is bubbling
10. Cool completely before slicing
Notes
Use freshly grated cheddar for best melt and flavor
Lightly toast seeds before mixing for extra nuttiness
Store slices airtight or freeze up to 3 months
